Listán Blanco is the Canary Islands name for Palomino, the grape behind sherry. It is the most planted white grape in the Canaries, where many old vines grow ungrafted in volcanic soil. There it gives dry wines with modest acidity, gentle fruit and a saline, sometimes smoky character from the soil.
