Assyrtiko

Assyrtiko is the signature white grape of Santorini, now planted across Greece. It keeps high acidity even in a hot climate, giving dry wines with citrus, a saline, stony character and a firm structure that ages well. On Santorini the old vines grow ungrafted in volcanic soil, trained low into basket shapes to shelter the grapes from wind.
